Recipe: Cuban-style red snapper

Learn why Shedd chose American red snapper as January's fish of the month.

Huachinango Enchilado

(Cuban-style red snapper filets)

Serves 6

Ingredients:
6 tablespoons extra virgin olive oil
1 tablespoon fresh garlic, finely chopped
2 cups onions, thinly sliced
1 cup of red or yellow peppers, thinly sliced
2 cups canned whole tomatoes, drained and chopped
2 tablespoons tomato paste
1 bay leaf
3/4 cup dry white wine
1/4 cup capers
3/4 cup green olives
salt and black pepper to taste
2 1/4 lbs American red snapper fillets, skinned

Seafood recipe: Fillet of Snapper

Fillet of Snapper with Lime Reduction
Serves 4.

Ingredients:
4 (4-ounce) fillets of American red snapper
½ teaspoon sea salt
¼ teaspoon black pepper
2 teaspoons Worcestershire sauce
1 tablespoon fresh lemon juice
¼ cup white wine or chicken stock
¼ cup whole wheat flour
2 tablespoons extra-virgin olive oil
2 tablespoons organic unsalted butter
2 tablespoons chopped fresh parsley
3 tablespoons fresh lime juice
Fresh lime wedges, for garnish

Beluga calf update

Calf-update We appreciate the many comments and thoughts we’ve received over the last week, and wanted to provide you an update on Naya, along with Puiji and her calf.

Naya, whose calf failed to thrive after a rare and difficult birth earlier this week, is doing extremely well. She is eating and playing with her trainers like normal, appears more relaxed, and is almost back to her old self. Because Naya has an incredibly strong bond with Puiji, and has been a nursemaid to many of our previous calves, she is currently swimming with Puiji and her calf in Secluded Bay. It’s encouraging to see Puiji’s calf spending time with Naya. In fact, Puiji’s calf currently spends almost 25% of its day with Naya, something that Puiji allows and Naya seems to appreciate.

Shedd is saddened by loss of beluga calf

Shedd Aquarium is deeply saddened to announce the loss of the beluga whale calf born Sunday afternoon to 20-year-old Naya. Puiji’s calf, born on Monday, December 14, continues to progress well through his bonding and nursing milestones.

This is an extremely sad day for the Shedd Aquarium family. Over the past 48-hours we provided round-the-clock care to the calf, and this morning we became more concerned since he continued to be disoriented in his swimming and still had not reached the two critical milestones of bonding with mom and nursing. Based on our knowledge of a healthy calf, we knew something was wrong.

Second beluga calf

UPDATE Dec. 22:  Shedd Aquarium is deeply saddened to announce the loss of the beluga whale calf born Sunday afternoon to 20-year-old Naya. Puiji’s calf, born on Monday, December 14, continues to progress well through his bonding and nursing milestones. Read more.
 


480P5082 At 2:25 p.m. on Sunday, Dec. 20, one of Shedd Aquarium’s beluga whales, Naya, successfully gave birth to a male calf, with physical assistance from Shedd’s animal health and animal care experts. It is the first time a beluga whale calf has been successfully birthed with human assistance at Shedd, and only the fourth known in the zoo and aquarium community.

Meet Shedd's new baby beluga

At 6:36 a.m. on Monday, Dec. 14, we welcomed Puiji’s calf into the Shedd family. Mom and calf are doing well.




Puiji and calf_birth1 When Puiji’s behavior changed Sunday, Ken Ramirez, Shedd’s senior vice president of animal collections and training decided to spend the night at the aquarium, joining marine mammals staffers already observing Puiji in Secluded Bay. Around 11:30 p.m., the 23-year-old whale went into labor, at intervals crunching her nearly 11-foot frame to move the process along.

Flight of Fantasea

Rick is a member of the Marine Mammals Department and a featured performer in the new aquatic show, Fantasea. In this magical production, dolphins jump and summersault, beluga whales tail walk and breach, and marine mammal trainers fly and freefall into the water from breathtaking heights.
