Great Lakes sustainable seafood recipes

Pan-Fried Parmesan Yellow Perch
Serves 4

Ingredients:
2 tablespoons grated Parmesan cheese
¼ cup bread crumbs
½ teaspoon dried thyme or basil
¼ teaspoon sea salt
¼ teaspoon black pepper
4 (6-ounce) yellow perch fillets
¼ cup buttermilk
3 tablespoons olive oil
2 tablespoons fresh basil, chopped

Procedure:
1. In small bowl, mix together cheese, bread crumbs, dried herbs, salt, and pepper.
2. Dip fish fillets into milk, then coat them evenly with the bread crumb mixture.
3. Heat oil in large skillet or pan over medium heat. When hot, add fillets and cook a few minutes on each side, until fish easily flakes, about 8-10 minutes total.
4. Garnish with fresh basil.


Baked Whitefish with Garlic and Tomatoes
Serves 4

Ingredients:
4 (6-ounce) whitefish
1 large bunch cilantro, chopped
4 garlic cloves, sliced thinly
3 plum tomatoes, sliced thinly
¼ cup olive oil
1 tablespoon paprika
½ teaspoon sea salt
½ teaspoon ground cumin
½ teaspoon ground coriander
¼ teaspoon crushed red pepper flakes
½ cup chicken or vegetable stock

Procedure:
1. Preheat oven to 400 degrees. Lightly grease bottom of 9x9” baking dish.
2. Layer whitefish on bottom of baking dish. Top with cilantro, garlic, and tomato slices.
3. Whisk together oil, paprika, salt, cumin, turmeric, and red pepper flakes. Pour over fish. Add enough stock to dish to just cover the bottom of the fish.
4. Cover with foil and bake in oven for 20 minutes, until fish is flaky and cooked through. If desired, finish dish off by placing under broiler for a few minutes to make a slightly crusted top.
